Directions
Lemon Sauce Preparation:
Combine Ingredients: In a pot, mix lemon juice, lemon zest, eggs, sugar, and salt.
Cook: Over medium heat, whisk continuously until the mixture thickens.
Finish: Remove from heat, stir in butter until melted and combined. Sift the mixture to ensure smoothness, transfer to a clean bowl, cover with plastic wrap (touching the surface to prevent a skin from forming), and refrigerate until cool.
Tiramisu Cream:
Mix Cheese: In a bowl, blend softened mascarpone cheese, sugar, and 120g of the cooled lemon sauce until smooth.
Whip Cream: Add heavy cream to the mascarpone mixture. Beat until the mixture thickens and forms stiff peaks. Ensure not to overbeat.
Assembling the Base:
Prepare Soaking Mixture: Combine water, sugar, lemon juice, and lemon zest in a bowl.
Soak Ladyfingers: Briefly dip each ladyfinger into the mixture and arrange in a single layer at the bottom of the baking dish.
Layering: Spread a thin layer of lemon sauce over the ladyfingers. Add half of the tiramisu cream, smoothing the top. Repeat with another layer of soaked ladyfingers and lemon sauce. Top with the remaining cream, smoothing the surface.
Chill: Refrigerate the assembled tiramisu for at least 4 hours, preferably overnight, to set.
Finishing Touches:
Before serving, top the tiramisu with a thin layer of lemon sauce and sprinkle with lemon zest for added zestiness and color.
