Directions
1. Prepare the Dough:
In a large mixing bowl, whisk together flour, sugar, salt, and baking powder.
In a large mixing bowl, whisk together flour, sugar, salt, and baking powder.
If using, stir in your choice of dried fruit, chips, nuts, or Jammy Bits.
2. Mix Wet Ingredients:
In a separate bowl, whisk together eggs, vanilla extract (or your choice of flavor), and half-and-half or milk.
Pour the wet ingredients into the dry ingredients, stirring until everything is moistened and holds together.
3. Shape and Chill the Dough:
Turn the dough out onto a lightly floured surface and divide it in half.
Shape each half into a 5" (for plain) or 6" (if add-ins are used) circle, about 3/4" thick.
Cut each circle into 6 wedges and place on a prepared baking sheet. Brush with milk and sprinkle with coarse sugar or cinnamon sugar, if desired.
Separate the scones slightly and chill in the freezer for 30 minutes to relax the gluten and chill the fat.
4. Bake:
Preheat your oven to 425°F with a rack in the upper third.
Bake the chilled scones for 18 to 23 minutes, or until they are light golden brown. Check that they are baked through by ensuring the edge looks dry and the scones feel set.
Let the scones cool briefly on the pan, then serve warm with butter, jam, or as is.
Recipe Note
Tips:
- Flour and Milk Adjustments: The correct amount of milk can vary based on the humidity and weather. Start with the lesser amount and add as needed to reach the desired dough consistency.
- Freezing for Later: Unbaked scones can be frozen and stored for up to a month. Bake directly from frozen, adding a few extra minutes to the baking time.
- Customizing Your Scones: Feel free to experiment with different add-ins or flavors to make the scones your own. Savory scones are also an option with the right add-ins and seasoning.
*Tips on Jammy Bits:
Jammy Bits are soft, fruit purée morsels available in various flavors.
They can add a burst of fruitiness to your scones without the added moisture of fresh fruit.
Embrace this guide to baking vanilla scones as your foundation for creating a plethora of delightful variations.
Whether enjoyed with a cup of tea or as a treat on their own, these scones promise to delight. 🌟
