- Confectioners' Sugar: 80g

Brown the Butter:
In a medium pot, melt 40g of butter over medium heat. Continue cooking until it foams and turns golden brown with brown specks at the bottom of the pan.
Remove from heat and pour into a clean bowl to cool.

Soften the remaining 100g of butter in a mixing bowl. Add the cooled brown butter and beat with a hand mixer until light and fluffy.

Sift in cake flour, almond flour, and salt. Mix until just combined, avoiding overmixing to keep the dough light.
Chill and Roll the Dough:
Place the cookie dough between two sheets of parchment paper. Roll out to 1 cm thickness.
Chill in the refrigerator for 30 minutes to firm up.
Baking the Cookies:
Preheat the oven to 311℉ (155℃).
Line a baking tray with parchment paper.
Remove the top sheet of parchment from the chilled dough. Cut out cookies using cookie molds.
Transfer cookies to the prepared tray and bake for 32 minutes, or until golden brown.
Remove from the oven and allow to cool on a cooling rack before serving.
