Ingredients
- Graham cracker crumbs: 1 ½ cups (180 grams)
- Granulated sugar: ¼ cup (55 grams)
- Unsalted butter (melted): 6 tbsp (85 grams)
- Cream cheese (softened): 907 grams (4 packages of 8 oz)
- Granulated sugar: 1 ¼ cups (250 grams)
- Ube halaya jam: 1 cup (300 grams)
- Full-fat sour cream: ½ cup (120 grams)
- Ube extract: 1 tbsp
- Large eggs: 4 (room temperature)
- Salt: ¼ tsp
- Heavy whipping cream: 1 cup
- Powdered sugar: 2 tbsp
- Ube extract: 1 tsp
- 8-inch or 9-inch springform pan

Crust Preparation
1、Preheat Oven:
Preheat the oven to 325°F (163°C).
2、Prepare Crust:
In a medium bowl, combine 1 ½ cups graham cracker crumbs and ¼ cup granulated sugar. Mix well.
Add 6 tbsp melted unsalted butter and stir until the mixture is well combined.
Press the mixture firmly onto the bottom of a greased 8-inch or 9-inch springform pan.
3、Bake Crust:
Bake the crust in the preheated oven for 10 minutes. Remove and let it cool down.
Filling Preparation
1、Beat Cream Cheese:
In a large mixing bowl, beat 907 grams of softened cream cheese for 3 minutes at medium speed until creamy.
2、Add Sugar and Ube:
Add 1 ¼ cups granulated sugar to the cream cheese and beat for another 2 minutes. Scrape the bowl.
Add 1 cup ube halaya jam, ½ cup sour cream, and 1 tbsp ube extract. Mix until well combined.
3、Incorporate Eggs:
Add 4 eggs one at a time, ensuring each egg is fully incorporated before adding the next. Avoid overmixing.
4、Final Mix:
Add ¼ tsp salt and mix briefly until incorporated.
5、Prepare for Baking:
Pour the cheesecake batter over the cooled crust.
Baking
1、Water Bath Setup:
Wrap the bottom of the springform pan with several layers of aluminum foil to prevent water from seeping in.
Place the pan in a larger roasting pan and fill the roasting pan with hot water to create a water bath.
2、Bake Cheesecake:
Bake the cheesecake in the preheated oven for 60-75 minutes. The center should jiggle slightly, while the edges are set.
Turn off the oven and leave the cheesecake inside for 1 hour with the door closed.
3、Cooling:
Let the cheesecake cool on the counter, then refrigerate for at least 6 hours before removing the springform pan ring.
Ube Whipped Cream
1、Whip Cream:
In a large bowl, whip 1 cup heavy whipping cream, 2 tbsp powdered sugar, and 1 tsp ube extract until stiff peaks form.
Pipe the whipped cream on top of the cheesecake.
