Ingredients
- 1 ½ cups (3 sticks) unsalted butter, melted and cooled (340g)
- 1 ½ cups light brown sugar (300g)
- 1 cup granulated sugar (200g)
- 1 large egg
- 1 large egg yolk
- 1 tablespoon vanilla extract
- 1 teaspoon baking soda dissolved in 2 tablespoons hot water
- 2 cups all-purpose flour (250g)
- 1 cup cake flour (125g)
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1 ½ teaspoons salt
- 1 cup white chocolate chips (180g)
- 1 cup milk chocolate chips (180g)
- 1 cup chopped pecans (optional) (120g)

Directions
Melt the Butter: In the microwave, melt the butter in 20-second increments. Allow it to cool for 15-20 minutes before using.
Combine Sugars and Butter: In a large mixing bowl, mix the cooled butter with the brown sugar and granulated sugar. Beat for 2-3 minutes until fluffy.
Add Eggs and Vanilla: Add the egg, egg yolk, and vanilla extract. Mix until well combined.
Dissolve Baking Soda: In a small bowl, mix 2 tablespoons of hot water with the baking soda until fully dissolved. Add this mixture to the cookie dough.
Mix Dry Ingredients: In a separate bowl, combine the all-purpose flour, cake flour, baking powder, cinnamon, and salt. Gradually add the dry mixture to the wet ingredients, mixing until just combined.
Stir in Chocolate Chips and Nuts: Fold in the white and milk chocolate chips along with the chopped pecans (if using).
Chill the Dough: Cover the dough and chill for 3-24 hours. This step is essential for achieving the right texture.
Preheat the Oven: Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
Shape and Bake the Cookies: Scoop dough using 2 tablespoons for small cookies or 3 tablespoons for larger cookies. Place the dough balls 2 inches apart on the baking sheet. Bake for 10 minutes for small cookies or 13-15 minutes for larger cookies until the edges are golden brown.
Reshape (Optional): If desired, reshape the warm cookies with a spatula for perfect rounds.
Cool and Store: Let cookies cool on the baking sheet for 3-5 minutes before transferring them to a wire rack. Store cooled cookies in an airtight container.
