Ingredients
- 4 cups quartered strawberries (600 grams)
- 1 cup granulated sugar (200 grams)
- 4 tbsp lemon juice
- 1/3 cup strawberry jam
- 1 cup strawberry liqueur (or substitute with strawberry juice, orange juice, or Grand Marnier)
- 2 cups mascarpone cheese (452 grams)
- 1/2 cup powdered sugar, divided (62.5 grams)
- 3 tbsp lemon juice (45 ml)
- 1 tsp pure vanilla extract
- 1 3/4 cup heavy whipping cream, very cold (420 ml)
- 3/4 cup chopped strawberries (112 grams)
- 28 ladyfinger cookies
- 1/2 cup whipping cream, very cold
- 1 cup freeze-dried strawberries (28 grams)

Strawberry Jam
Place strawberries, sugar, and lemon juice in a saucepan.
Bring to a boil, reduce heat, and simmer until thick and dark (200-220ºF).
Stir occasionally to prevent sticking. Cool completely before use.
Mascarpone Filling
Beat mascarpone with 1/4 cup powdered sugar, lemon juice, and vanilla until smooth.
Whip heavy cream with remaining powdered sugar until stiff peaks form.
Fold whipped cream into mascarpone mixture until light and fluffy.
Strawberry Syrup
Mix jam and liqueur/juice until well combined.
Assembling the Tiramisu
Dip each ladyfinger quickly in strawberry syrup and place them in the baking pan.
Spread half of the mascarpone filling over the ladyfingers.
Drizzle with strawberry jam and sprinkle chopped strawberries.
Add another layer of dipped ladyfingers, gently pressing down.
Top with the remaining mascarpone filling.
Cover and refrigerate overnight.
Topping and Serving
Whip 1/2 cup heavy cream to stiff peaks and pipe on top (optional).
