Tools Needed
Directions
Preheat Oven: Preheat to 350°F (175°C). Line two baking sheets with parchment paper.
Mix Dry Ingredients: Whisk together flour, baking powder, and salt in a small bowl. Set aside.
Cream Butter and Sugar: In a large bowl, use an electric mixer fitted with the paddle attachment to beat butter, sugar, and lemon zest until light and fluffy, about 3-4 minutes. Scrape down the bowl.
Add Egg: Beat in the egg until well combined, about 1 minute. Scrape the bowl.
Combine Ingredients: On low speed, add the flour mixture and blend until just incorporated. The dough will be slightly dry.
Form Cookies: Using a medium spring-loaded cookie scoop, drop 1 ½-tablespoon balls of dough onto prepared baking sheets, spacing 2 inches apart. Roll each ball and flatten to about 1/3-inch thick.
Bake: Bake for 12-14 minutes or until cookies are just set and slightly golden at the edges. Cool on the baking sheet for 5 minutes before transferring to wire racks to cool completely.
Make Glaze: In a medium bowl, whisk powdered sugar and lemon juice until a thick but pourable glaze forms.
Glaze Cookies: Spoon glaze onto each cooled cookie and garnish with extra lemon zest if desired. Let set for at least 30 minutes.
Recipe Note
Notes
- Refrigeration: No chill time required before baking.
- Doubling/Halving: Adjust ingredient quantities as needed. For halving, divide the egg (2 tablespoons).
- Cookie Bars: To make cookie bars, press dough into an 8×8-inch pan, bake for 23-25 minutes, then glaze and cut into bars.
Enjoy these bright, lemony cookies as a delightful treat that’s sure to brighten up any day!
