This no-bake Jello Cheesecake is perfect for a refreshing summer treat.
With a tangy lemon flavor and a crispy graham cracker crust, it’s easy to make and ideal for any occasion.
Ingredients
- 2 ¼ cups graham cracker crumbs
- 2 tablespoons granulated sugar
- 10 tablespoons unsalted butter (melted)
- ¾ cup boiling water
- 4 oz package lemon Jello
- 24 oz cream cheese (full-fat, brick-style)
- 1 cup powdered sugar
- 2 tablespoons freshly squeezed lemon juice
- 8 oz tub whipped topping
- Whipped cream
- Fresh berries
- 9-inch springform pan
- Medium bowl
- Large bowl
- Electric mixer
- Rubber spatula
- Knife (for serving)

Directions
Prepare Crust:
In a medium bowl, combine graham cracker crumbs and sugar.
Stir in melted butter until well combined.
Press the mixture into the bottom and partially up the sides of a springform pan.
Refrigerate while preparing the filling.
Prepare Filling:
Dissolve the lemon Jello in boiling water, stirring until fully dissolved. Allow it to cool to room temperature.
In a large bowl, beat the cream cheese until smooth and soft.
Mix in powdered sugar and lemon juice until well combined.
Gradually beat the cooled Jello mixture into the cream cheese mixture on low speed, scraping the bowl as needed.
Gently fold in the whipped topping until evenly mixed.
Assemble Cheesecake:
Spoon the filling over the chilled crust and smooth the top.
Refrigerate for at least 6 hours, or until set.
Serve:
Run a thin knife around the edges of the springform pan and carefully remove the sides.
Optionally, top with whipped cream and fresh berries before serving.

Notes
- Storing Leftovers: Store in the refrigerator covered loosely with plastic wrap or foil for 5-7 days.
- Freezing: Wrap in plastic wrap (without toppings) and foil. Store in an airtight container or wrap again. Freeze for 3-4 months for best quality, or up to 6-8 months. Thaw in the refrigerator overnight before serving.
